
Anji Bai Cha or An ji White Tea is actually a type of green tea, it is a totally unfermented tea. The term white refers to the whitish color of the leaves, and the pale color of the brewed tea. Its is named “bai cha (white tea)" because of its special tea bush species: Bai Ye No.1. In the spring of each, only in one month or so, when the average temperature of the day is lower than 23℃, the tea buds of the tea tree will be chlorophyll-deficient, showing a yellow-white appearance.
